FROG PORRIDGE

Frog porridge is one of the unique dishes and contributes to the special cuisine of Singapore. For those who like to eat warm dishes, frog porridge will definitely be the perfect choice.

HOW TO COOK

- After purchasing the frog meat, the skin has been cleaned. To remove the odor, we will soak the frog meat in diluted salt water for about 5 minutes, then rinse and drain. Put the frog meat in a bowl , marinate with a mixture of spices including: 1 tablespoon seasoning powder, 1 tablespoon cooking oil, 1/2 tablespoon sugar, 2 tablespoons dark soy sauce, 2 tablespoons oyster sauce, 1 tablespoon apricot cinnamon wine and 1 teaspoon ground pepper. Use chopsticks to mix well and marinate for about 30 minutes so that the frog meat absorbs the spices.

- Put 2 liters of filtered water in the pot and put the pot on the stove . Add 1 cup of plain rice to the pot then cover and cook for about 15 minutes until the mixture boils. At this time, lower the heat and continue cooking for another 30 - 35 minutes until the rice is soft and the white porridge is complete.

Fry the shallot and garlic until fragrant, then add the marinated frog meat and stir-fry for about 5-7 minutes until the meat is firm. Next, add the meat marinade and cover and cook for another 5 minutes. After 5 minutes, open the lid and use a spoon to stir well then add 2 tablespoons of tapioca starch diluted with 1/2 cup of water. Cover and continue cooking for another 3 - 5 minutes until the stock thickens slightly, then add the chili and chopped green onions and turn off the stove.

Scoop the cooked white porridge into a bowl, sprinkle some chopped green onions on top and it's done. You can prepare some grilled rice paper to eat with it if you like!
